Before settling in Emilia, the passion of Chef Pietro Gisondi for the great cuisine was born in Puglia, his homeland, and grew alongside masters like Andrea Berton, Moreno Cedroni and Luca Marchini.
The signature of his dishes is in the respect for raw materials and their seasonality, enhancing the identity of the individual ingredients and the delicate balance that binds them together.
His cuisine does not impose a taste philosophy, it wants to leave the customer free to find the harmony on their plate.
Alongside the Chef, a kitchen brigade made up of young and motivated professionals is at work, animated by a great passion and a great respect for their work.
