Itineraries: Food & Wine
Discover, know, taste
Opera 02 was born in the heart of a territory linked in an indissoluble way to its food and wine tradition. From Parmigiano Reggiano to Traditional Balsamic Vinegar of Modena, from the great Emilian delicatessen to Lambrusco Grasparossa, the products of this land are today among the best known standard bearers of Italian cuisine in the world. Opera 02 is an integral part of this heritage, thanks to the productions of its wine and vinegar cellars. And in the same way, our kitchen draws every day from the best that this land offers, to bring our guests the most authentic preparations alongside the most original reinterpretations.
For all those interested in getting to know the great food and wine productions of the area more closely, there is a large network of companies, museums, exhibition spaces, traditional and non-traditional markets, where you can touch the techniques and raw materials yourself or buy directly. While some of the best products are available directly in our store, the Opera 02 reception is always available to advise our customers on the selected producers where to buy directly, as well as all the places of taste to be known and visited.
Parmigiano Reggiano
Parmigiano Reggiano is world famous for being the king of cheeses, and with good reason. Produced exclusively in the territory that goes from the province of Parma to the Reno river, at the gates of Bologna, and from the ridge of the Apennines to the Po, Parmigiano Reggiano is the result of ancient gestures, preserved by a rigorous method and uncompromising quality. There are many dairies in the area where you can both make guided tours and buy products directly.
Aceto Balsamico Tradizionale di Modena
The Traditional Balsamic Vinegar of Modena is a unique product of its kind, linked in an indissoluble way to the territory and its history. Its origins are lost over the centuries, while the secrets of its production, as well as the precious barrels used for its maturation, have always been jealously kept inside every family vinegar cellar. Opera 02 organizes visits and tastings within its own vinegar factory, while, for all colors interested in deepening the history and tradition of this product, an unmissable destination is the Museum of Traditional Balsamic Vinegar of Spilamberto.
Lambrusco Grasparossa
Lambrusco is a unique wine of its kind, very ancient and tied to a territory with geography and precise characteristics. Among the various vines, Lambrusco Grasparossa, grown on the hills and in the foothills of Modena, is certainly the most robust, straightforward and rich in structure. Not only a great protagonist of the peasant tradition, but also a great protagonist of the table. The Opera 02 cellar is available for guided tours and tastings, while for those interested in learning more about the history of this wine and its link with the territory, within a short distance, inside the Castello di Levizzano, the Rosso Graspa Museum is dedicated to the local peasant tradition and its main product.
