Opera|02 is an integral part of this heritage, thanks to the productions of its winery and vinegar cellar. And in the same way, our kitchen every day draws heavily from the best that this land offers, to bring our guests the most authentic preparations alongside the most original reinterpretations.
For all those interested in learning more about the area’s great food and wine productions, there is an extensive network of farms, museums, exhibition spaces, traditional and non-traditional markets, where you can touch the techniques and raw materials or buy directly. Parmigiano Reggiano
Parmigiano Reggiano is world famous as the king of cheeses, and with good reason. Produced exclusively in the area from the province of Parma to the Reno River, just outside Bologna, and from the Apennine ridge to the Po River, Parmigiano Reggiano is the result of ancient gestures, preserved by a rigorous method and uncompromising quality. There are many dairies in the area where it is possible to both take guided tours and buy products directly.
Traditional balsamic vinegar of Modena
Traditional Balsamic Vinegar of Modena is a unique product, inextricably linked to the territory and its history. Its origins are lost in the centuries, while the secrets of its production, as well as the precious barrels used for its maturation are jealously guarded from time immemorial within each family vinegar cellar. Opera 02 organizes tours and tastings inside its vinegar cellar, while, for all colors interested in learning more about the history and tradition of this product, a must-see destination is the Museum of Traditional Balsamic Vinegar in Spilamberto.
Salumeria
If the tradition of charcuterie has an important history in many regions of Italy, certainly in Emilia-Romagna this one reaches peaks of excellence. The area’s master charcutiers have given rise to productions that today are known and appreciated all over the world, while the quality of authentic craftsmanship still characterizes the best products. Opera 02’s reception desk is always available for any suggestions on tastings and purchases. While for all enthusiasts and the curious, it is possible to visit the Salumeria Museum at the Salumificio Villani in the nearby town of Castelnuovo Rangone.
Lambrusco Grasparossa
Lambrusco is a completely unique wine, very ancient and linked to a territory with precise geography and characteristics. Among the different grape varieties, Lambrusco Grasparossa, grown in the hills and foothills of Modena, is certainly the most robust, straightforward and richly structured type. Not only a great protagonist of the country tradition, but also a great protagonist of the table. The winery in Opera|02 is available for guided tours and tastings, while for all those interested in learning more about the history of this wine and its connection to the territory, a short distance away, inside the Levizzano Castle, is the Rosso Graspa museum, dedicated to the local peasant tradition and its princely product.
