PROCESSING:
Cooking over direct heat in open boilers, natural fermentation and acetification of the cooked must, successive racking between casks, slow aging in wood under the watchful eye of the producer.
AGE:
The Certifying Body and the Commission of Expert Tasters certify the two available quality levels: Affinato, aged a minimum of 12 years, Extravecchio, aged a minimum of 25 years* (gold capsule) (*: any reference to the year of production, or to the presumed age of the product, as established by the Disciplinary, may not be declared on the packaging; only the citation “Extravecchio” is allowed, for the product that has been aged not less than 25 years)
FEATURES:
Dressing lively and fruity, slightly acid, good for everyday use. Made from cooked must of Trebbiano and Lambrusco grapes typical of Modena, acetified and aged in barrel for 6 pourings
