An authentic experience among 318 barrels in which the PDO Traditional Balsamic Vinegar completes its long aging process.
The evening program:
20.30 Beginning of the Dinner with Tasting Menu of 5 courses designed to enhance the characteristics of each vinegar of different aging
Entrée: Parmigiano Reggiano PDO 24 months with ABTM 21 Years
Parmigiano Reggiano PDO Pudding and Balsamic Vinegar aged 12 years
Pumpkin Risotto, Amaretto Crumble and Balsamic Vinegar aged 9 years
Tortellini of Modena in Parmigiano Reggiano DOP cream
Pork fillet, red fruit sauce, Porcini mushrooms and black truffle
Ice cream with ABTM 21 years
To accompany the traditional dishes will be served: Lambrusco Grasparossa Opera Brut DOP and Malbo Gentile Rosso Fermo IGP in quantity to taste.
The total cost will be 60 euros per person. Water, coffee and covered will be included.
