Our story
Passion, perseverance, and dedication are among the values that Mattia Montanari, CEO of Opera02, has inherited from his family and has been able to materialize in this startup day after day, year after year. With the beginning of the project in 2002, from which the name OPERA02 originates, the first vines of Grasparossa were planted, one of the oldest indigenous grape varieties in the world. The name “Grasparossa” derives from its peculiarity: the reddish hues that the leaf takes on in the last days of September and throughout the autumn period. In the following years, other grape varieties such as Trebbiano di Modena, whose grapes are the basis of Traditional Balsamic Vinegar of Modena, and Malbo Gentile were added. Each of these vineyards is cultivated organically, and this respect is reflected in every aspect of OPERA02: an accommodation facility with a restaurant and eight junior suites whose design recalls various local products. The attention to ancient gestures and love for nature blend, therefore, with a forward-looking approach towards renewable energy systems and care for the territory.

The winery
Opera02’s organic wines are the result of continuous evolution and experimentation, where tradition and modern technology come together in a process that prioritizes quality over quantity. Each year, our wines follow the natural rhythm of the seasons. As nature evolves through its countless nuances, every wine is unique, yet always true to its identity. Producing wines that are genuine and natural is at the heart of our philosophy.
The Vinegar Loft
Traditional Balsamic Vinegar of Modena not only tells the story of a city but also passes down the history of each family. The secrets of its shiny black color and its unmistakable scent derive from the long aging process that the vinegar undergoes in different wooden barrels. The transformation process of cooked grape must requires great care and patience.
And so it happens in the Acetaia of OPERA|02 with its 318 barrels that have been guarding the Montanari family’s Balsamic Vinegar for three generations, now enhancing the dishes of our restaurants. Only Trebbiano di Modena grapes, rigorously cultivated in our organically managed vineyards, are used for this product. The tours, tastings, and experiences are an excellent way to get closer to the heart of Emilian flavors.

A sustainable structure
A deep respect for traditional practices and a genuine love for nature are combined with a forward-looking approach to renewable energy and care for the local environment.
Since January 2024, we have achieved full energy independence, further reflecting the philosophy of our agriturismo. A large rooftop installation allows us to be fully self-sufficient, using solar panels for hot water and photovoltaic systems for electricity. We also provide charging stations for electric vehicles.
Across all aspects of production and hospitality, our goal is to maintain a low environmental impact. The cellar, built in the hillside, ensures natural insulation and minimizes energy consumption.
Our guiding principle is respect for nature: preserving tradition through careful attention to detail, while remaining open to innovation.
